With the rising hot temperatures lately, I’ve been craving a lot of fresh salads, cold pasta and fruit. So when we had people over last night, we served up a light fare and enjoyed an outdoor party (with lots of chilled wine too!)
A mix of romaine and butter lettuce chopped, roasted turkey (cubed), shredded carrots, tomatoes, shredded mozzarella, cucumber, avocado, sprouts.
I tossed everything together right before serving. You can use your favorite dressing or make this (super easy!) one:
START WITH DRY INGREDIENTS:
1 tsp kosher salt
Pinch of garlic salt
2 packs splenda
Dash of pepper
1 tsp dijon mustard (I use Grey Poupon)
ADD IN WET INGREDIENTS:
1 cup olive oil
1/4 cup balsamic vinegar
Squeeze of lemon
WHISK OR SHAKE EVERYTHING TOGETHER
Pasta shells, basil pesto (store bought or made fresh) with peas and sprinkled with parmesan. So quick to make and always delicious.
Cute pitchers make for great vases too!
You can serve with bread if you like and ENJOY!
